The Morning Ritual

The Grind
We weigh 18 grams of Yirgacheffe. The EK43 shatters it into a fine, fragrant powder. The room smells like bergamot and honey.
The Pull
Nine bars of pressure. Twenty-eight seconds. The espresso drops like warm honey, building a thick, hazelnut-coloured crema.
The Pour
We steam local milk to exactly 60°C. Sweet microfoam folds into the espresso, finishing with a sharp, symmetrical tulip.

FROM THE COUNTER
We open at six. We close when the conversation ends.
We started Bayt Layali in a warehouse in Al Quoz because we missed the kind of café we grew up around — somewhere you sit for two hours and nobody asks if you're done.
We pull our coffee at 1:2 in 28 seconds, but the rest of the room runs slower than that.
